Caprese Salad Skewers on Mini Toasts
Happy Belated Easter! I hope everyone had a fabulous holiday filled with family, friends and lots of Easter eggs. I hosted my first Easter dinner yesterday and I have to say that my simple menu was easy to prepare and fun to make. With a little forethought, we had dinner on the table pretty quickly and were able to enjoy a wonderful meal with our guests.
I was even able to create this easy appetizer dish for my guests while they waited patiently for the ham to be done. It combined mini toasted baguette slices and caprese salad skewers. When it comes to appetizers at a party, the easier and more make ahead friendly the better. I would even try these as a dinner starter on a warm summer evening once your fresh basil comes into your garden.
Makes 16 Mini Toasts
You Will Need:
Half a baguette cut into 16 Slices
16 Cherry Tomatoes
16 Small Cubes of Fresh Mozzerella Cheese
16 Sprigs of Basil
Olive Oil
Salt and Pepper (for seasoning)
Toothpicks
1. Slice the baguette into mini toasts. Drizzle with a little olive oil and toast in the oven for 6 to 7 minutes. They should be a little crispy on top, but not overdone.
2. On toothpick, slide on one cherry tomato, one cube of mozzarella cheese and one sprig of basil.
3. Place each toothpick skewer on a mini toast. Drizzle with olive oil and season with salt and pepper.
These caprese salad skewers made delicious appetizer bites. They were really tasty to eat the caprese salad in one bite followed by some crispy toast. I guess the evidence of their deliciousness was that they didn’t last ten minutes with our guests. And I don’t think it was because they were starving!
