Easy No Bake Mini Berry Tarts

My favorite part of summer celebrations are berry desserts. Whether it’s berry and marshmallow fruit kabobs, delicious parfaits that look like firecrackers or even pie pops, any dessert that uses strawberries, blueberries or raspberries calls my name at a summer party. Good news is that these no bake mini berry tarts fit that exact description.
The best part about berry desserts is that they are perfect for any summer get together – small porch parties, outdoor barbeques or large birthday celebrations. Whatever you can dream up. And since these no bake mini berry tarts are no bake, you don’t even have to heat up the oven!
Okay, I have a little confession. To make these mini berry tarts even easier to make, I did cheat a little too. Instead of making graham cracker pie crusts from scratch, I used packaged graham cracker crusts. This is such a time saver, though. And it leaves more time to celebrate in the end!
To make 12 No Bake Mini Berry Tarts, you will need:
12 mini graham cracker pie tarts
1/2 cup sliced strawberries (sliced down the middle – if your strawberry is extra big, you might need to quarter it)
1/2 cup of blueberries
1 package (8 oz) of cream cheese
1/3 cup sugar
1/2 teaspoon vanilla
1 cup whipping cream
1. Beat the cream cheese until light an fluffy. (Also, check out my new stand mixer attachment. This is a flex edge beater (affiliate) and I have no idea how I’ve been a baker without it for so long. Basically, it’s a spatula attached to a beater. No more bowl scraping. Okay, so a lot less. Never going back to the regular beater again!)
Add the sugar and vanilla extract until well blended. It will look like the mixture above and taste heavenly.
Beat the whipping cream in a separate bowl. I like to use a hand mixer (affiliate) to make my whipped cream for two reasons… a. I get less distracted. If I use the stand mixer, I tend to walk away to help a little person. When I finally return, my whipped cream has turned to butter.
And b. It’s a good workout too. Since I’m about to eat this heavenly dessert, I might as well burn some calories in the process.
One last tip… use a metal bowl (affiliate) and chill it in the freezer for a few minutes before starting. I find the consistency of the whipped cream is better, especially when working in a kitchen during the summer months.
Add your whipped cream mixture to your cream cheese mixture. Combine completely. Lay out your graham cracker crusts to prepare for filling.
Fill your graham cracker crusts with the cream cheese mixture. Press down with a spoon if any tries to escape.
Carefully add the blueberries or strawberries (or you could mix the berries if you wanted to get even fancier or were hosting a patriotic themed party!). It’s important that your fruit is completely dry before adding. With the strawberries, try to keep the outside of the berry facing up. It’s a better surface for adding the next step.
Sprinkle some powdered sugar on top. I recommend doing this step right before serving your tarts so that the powdered sugar stays. If you have kids like mine, they will just keep requesting more powdered sugar until they can see it, which defeats the idea of a “sprinkling”.
These no bake mini berry tarts are the perfect addition to any summer celebration – especially a strawberry or blueberry themed party. They are easy, no bake (so you don’t have to heat the kitchen up) and look like you spent hours on them. What’s not to love!
And, of course, this dessert didn’t come completely out of thin air. It was inspired by our blueberry watercolor invitations that are currently in the shop.
