Watermelon Cake Pops

Summer is here!  I feel like we just got through a batch of cloudy cool weather and now the bright sunshiny days are here to stay.  Little Bug has been begging me for weeks to make her a batch of cake pops to celebrate the new season.  I couldn’t think of a better theme for them than watermelon.

The fun part about these watermelon cake pops is how to get them to look like watermelon.  A little pink food coloring for your cake and icing, mix in some mini chocolate chips for “seeds” and you have one delicious summertime treat that would be perfect at a watermelon themed party.

You Will Need:

A box of white cake mix

Can of white icing

Magenta Food Gel (or red if you prefer red watermelon)

12 ounce bag of mini chocolate chips

Bag of dark green candy melts

Bag of light green candy melts

6″ white lollipop sticks

Yields about 24 cake pops

1.  Prepare to bake your white cake mix according to package directions.  During the mixing process, add 5 to 8 drops of magenta food coloring to dye the cake pink.  Bake your cake according to box instructions. Let your cake completely cool.  Tip:  Bake your cake the first day and make the cake pops the second day.  I find the process is more efficient and fun!

2.  Add 5 drops of magenta food coloring to the white icing.  Mix well until you get a bright pink color.  Crumble the white cake into a bowl.  Mix 3/4 of a container icing into the crumbled cake.

Add 1/2 to 3/4 cup of mini chocolate chips depending on how chocolaty you’d like them and mix well.

3.  Roll balls about the size of a ping pong ball.  Place each cake ball onto a cookie sheet.  Put the cookie sheet into the freezer for about five minutes to solidify the cake.

4.  Melt half the green candy melts in the microwave for about a minute.  Stir the candy melts and continue to melt until melting is complete.  Add a dash of vegetable oil to smooth out the chocolate.  The chocolate is a good consistency when it drips off of a spoon evenly.

5.  Dip the tip of the lollipop stick in chocolate and then into the cake ball.  Let harden.  Stick the cake balls back into the freezer for about five minutes or until the chocolate is hardened.

6.  Dip the cake balls into the chocolate and swirl around to coat completely with chocolate.  Use a spoon to help coat if desired.  Place the dipped cake ball, cake side down, onto the cookie sheet.  Once you have an entire cookie sheet of dipped cake balls finished, place into the freezer for five more minutes or until chocolate is hardened.

7.  Melt 1/4 cup of the light green candy melts.  Place in a squeeze bottle.  Drizzle the light green chocolate on the dipped cake pops.  Place the cake pops in the freezer one more time to harden.  Enjoy!

These watermelon cake pops are such a fun treat for a summer picnic, pool party or any watermelon themed event.  And I promise, once you get the hang of making cake pops, they are one of the easiest desserts to make.  They are always the first to disappear from the dessert table and receive the most oohs and aahs.
